In the heart of Beaune, a stone’s throw from the Hospices, a boutique where time seems suspended. People come here to find wines long since drunk elsewhere — sometimes ones that have vanished altogether.

For more than fifteen years, Bernard and Étienne Hervet have been offering bottles laid down to rest, chosen with exacting care. They are presented at perfect maturity, at the moment they give their finest.

Here, wine is passed on as knowledge — an authentic, educational and passionate experience.
